Fried Chicken
Chicken biscuit sandwich with duckfat gravy.

Chicken

Ingredients

  • 6 chicken thighs
  • 4 cups pickle juice

  • 2 tsps paprika
  • 2 tbs black pepper
  • 1/2 tsps cayenne pepper
  • 1 tsps powdered MSG
  • 1 tsps onion powder
  • 2 tsps Season All
  • 1 tsps garlic powder

  • 1 cup all-purpose flour
  • 1/4 cup corn starch
  • 1/2 tsps baking powder
  • 1 cup buttermilk

  • peanut oil

Directions

  1. In a plastic bag brine chicken for 6 hours in pickle juice.
  2. Coat chicken in half of the seasonings.
  3. Mix the other half of the seasonings and dry ingredients to make a dredge.
  4. Coat the chicken in dredge, then dunk in buttermilk, then coat in dredge again.
  5. Fry at 300 for 20 mins.
