Chili rubbed pulled pork

Ingredients

  • 3-4 lbs pork shoulder
  • Ancho chili powder
  • 7 oz canned chipotle with adobe sauce
  • 2 tbs sugar
  • 1 tbs lime juice
  • 1 tbs orange juice
  • salt

  • olive oil
  • 1 onion chopped
  • 3 cloves garlic

  • 2 bay leaves
  • 2 teaspoons dried mexican oregano
  • 2 teaspoons ground coriander
  • 2 teaspoons ground cumin
  • ½ teaspoon ground allspice

  • 3-4 quartered roma tomatoes
  • One 12 oz bottle of beer

  • Cheap tequila

Directions

  1. Marinate pork shoulder in ancho chili powder, chipotle, sugar, salt, lime juice, and orange juice overnight
  2. Cook onion onion and garlic in olive oil until tender
  3. Add onion, garlic, bay leaves, coriander, cumin, oregano, and allspice to a slow cooker / multicooker at 180-200o.
  4. Add beer and tomatoes then bring to a boil.
  5. Add pork with marinade
  6. Braise pork every 15-30 minutes for 2.5 - 4 hours, leave a small crack at the lid to let some of the steam escape throughout cooking.
  7. Remove the pork and excess juices, then deglaze the pot with tequila
  8. Shred the pork while mixing in the deglazing

Refried beans

Ingredients

  • 4 oz bacon grease (4 tbs)
  • Half yellow onion diced
  • 1 clove minced garlic

  • Two 16 oz cans of pinot/black beans
  • Salt to taste

Directions

  1. In a frying pan cook onion and garlic in bacon grease until tender
  2. Strain the beans then add to the pan and cook until slightly browned.
  3. Mash everything together and continue to cook in a pan until little or no liquid remains.
  4. Add salt to taste

Flour tortillas

Ingredients

  • 2 cups all-purpose flour plus more for dusting
  • ¼ cup lard (4 tablespoons)
  • ½ teaspoon baking powder
  • ¾ teaspoon salt
  • ¾ cup warm whole milk

Directions

  1. Mix ingredients and kneed into a ball
  2. Let rest for 30 minutes
  3. Split dough into 10 balls and place into a bowl filled with flour
  4. Roll out on a flour covered surface
  5. Cook on cast iron over medium heat for 30-60 seconds on each side

All-up-in-yo' biniz aioli

Ingredients

  • ½ cup cilantro
  • 1 -2 jalepenos diced
  • 1 cup mayonaice with olive oil
  • 3 cloves garlic minced
  • ½ lime juiced (1/2 tbs)
  • ¾ teaspoon ground cumin
  • ¼ teaspoon salt

Directions

  1. Mix all ingredients in a food processor

Serve with shredded oaxaca cheese / monterey jack cheese. Top with pico de gallo if desired.
